Bean Salad with Pomegranate Seeds
This amazing bean salad is the perfect side dish to almost really any type of meal.

What you need:
Red Lentils
Kidney Beans
Chick Peas
Pomegranate Seeds
Parsley
Lemon Juice
Olive Oil
Herb Salt
Cumin
This is just a suggestion. Use whatever amounts of these ingredients as you wish, or change up the ingredients depending on what you currently have at home. Don’t get tied down to always having to follow recipes in the kitchen. Instead, use vegetables and sometimes recipes as inspiration to create healthy food with whatever you have at home at the moment.

Coconut Curry
Coconut curry can be made in a multitude of ways.
What you need:
- shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
