Cabbage & Carrot Salad
Cabbage salad is very convenient to make in large batches and keep in the fridge.

Cabbage salad is very convenient to make in large batches and keep in the fridge. Sometimes I make it with only cabbage and sometimes I add grated carrots.
What you need:
- white cabbage
- carrots (optional)
- olive oil
- apple cider vinegar
- salt
- pepper
- caraway (optional)
Start by thinly slicing or shredding cabbage, either by hand or in a food processor. Add some grated carrots if you want, and mix it together with the cabbage. Add olive oil, apple cider vinegar, salt, pepper, and caraway (seeds or ground). The caraway is optional, but it’s a favorite seasoning for me in this type of salad! 🙂

Coconut Curry

Coconut curry can be made in a multitude of ways.
What you need:
- shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
