What to Do with Green Onions – Real Food Basics
Green onions, also called scallions, are one of the green stars of spring! Once they become more mature they form a larger white onion bulb at the bottom and are then called spring onion.
Different ways of eating green onions:
- Sliced raw in salads.
- Sliced in soups.
- With other herbs in salad dressings.
- Baked or grilled.
- You can freeze sliced up green onion and then add desired amounts in cooking later on.
TIP: Don’t throw away the ends/roots of the green onions. Put them roots down in a glass jar with water, and in a few days they will start growing back!

Coconut Curry
Coconut curry can be made in a multitude of ways.
What you need:
- shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
