Omelette with Sautéed Brussels Sprouts

It may sound a bit strange and you may have never thought of putting Brussels sprouts in an omelette before, but I think you’ll be surprised at how good it is!

An omelette with Brussels sprouts?! It may sound a bit strange and you may have never thought of putting Brussels sprouts in an omelette before, but I think you’ll be surprised at how good it is! I cut the Brussels sprouts in half, sliced them up thinly, and then sautéed with diced onion, butter (or coconut oil), and garlic salt. I would have totally added mushrooms into the mix, but just used what I already had at home.

In another pan, add some butter or coconut oil and the amount of eggs you want in your omelette (I usually do 2-3) and once the eggs are cooked you add the sautéed Brussels sprout mixture on top of the eggs, flip the omelette half way, and then it’s done. Enjoy! 🙂
