Omelette with Sautéed Brussels Sprouts

An omelette with Brussels sprouts?! It may sound a bit strange and you may have never thought of putting Brussels sprouts in an omelette before, but I think you’ll be surprised at how good it is! I cut the Brussels sprouts in half, sliced them up thinly, and then sautéed with diced onion, butter (or coconut oil), and garlic salt. I would have totally added mushrooms into the mix, but just used what I already had at home.
In another pan, add some butter or coconut oil and the amount of eggs you want in your omelette (I usually do 2-3) and once the eggs are cooked you add the sautéed Brussels sprout mixture on top of the eggs, flip the omelette half way, and then it’s done. Enjoy! :)

What you need:

- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
