Roasted Chickpeas

Roasted chickpeas are a fun snack that’s lower in carbohydrates and higher in protein than popcorn and many other common salty and crispy snacks. Try making roasted chickpeas for your next movie night or bring with you as a quick snack on the go!

What you need:

  • Chickpeas
  • Olive oil or coconut oil
  • salt & spices

Here is how to roast chickpeas on the stove:

  1. Dry the chickpeas with a towel to get rid of excess moisture.
  2. Place a good amount of coconut oil on a pan on the stove.
  3. Add chickpeas and keep stove on medium temperature.
  4. Add salt and any spices you wish. (Garlic, cayenne, chili, cinnamon, rosemary/herbs, curry – the variations are endless!)
  5. Fry for 10-15 min, until they get crispy.

Or you can roast them in the oven:

  1. Dry the chickpeas with a towel to get rid of excess moisture.
  2. Place chickpeas on an oven sheet and drizzle a good amount of melted coconut oil or olive oil on top. Stir around so the oil covers all the chickpeas.
  3. Roast in oven for 20-30 minutes on 175°C/450°F, until chickpeas are crispy enough. Stir the chickpeas on the oven sheet every 10 minutes or so to avoid burning.
  4. Add salt and other spices and mix with the chickpeas. (Garlic, cayenne, chili, cinnamon, rosemary/herbs, curry – the variations are endless!)

Enjoy hot or cold. They will be more crispy when hot. If you let them sit a few days they will start getting soft again, absorbing the moisture in the air.

Coconut Curry

Coconut Curry

Coconut curry can be made in a multitude of ways.

What you need:

  • shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
  • OR frozen stir-fry vegetable mix (not AS good but faster)
  • protein (chicken, fish, shrimp, or lentils)
  • coconut milk
  • curry seasoning or curry paste (green or red, doesn’t matter)
  • salt

How to make it:

Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
