Sautéed Kale
One simple and delicious way of eating kale is sautéing it with onion.

One simple and delicious way of eating kale is sautéing it with onion. Fits perfectly with fried eggs as breakfast! You can also add mushrooms and other vegetables to the mix and either eat it as a side to a meal, or as a delicious omelette filling! Kale is such a versatile vegetable and it works great with a multitude of seasonings. Try seasoning sautéed kale with garlic, curry seasoning, or an herb mixture! And don’t forget a bit of salt, of course. 🙂
Use coconut oil or butter for sautéing so you’re not getting excess omega-6 through cheap vegetable oils that cause inflammation in the body.

Coconut Curry

Coconut curry can be made in a multitude of ways.
What you need:
- shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
