Strawberry Popsicles

My sister made these awesome cream popsicles for her daughter’s birthday party. She made two different ones – one with dairy and one without dairy. The light one is a strawberry ice cream and the darker one is a dairy free raspberry and strawberry ice cream with coconut milk instead of dairy. She sweetened the popsicles with xylitol and stevia extract.

You can really use any sugar free ice cream recipe you want! I’ll be filling up with more ice cream recipes the coming weeks as I translate my recipes from Swedish to English.

Coconut Curry

Coconut Curry

Coconut curry can be made in a multitude of ways.

What you need:

  • shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
  • OR frozen stir-fry vegetable mix (not AS good but faster)
  • protein (chicken, fish, shrimp, or lentils)
  • coconut milk
  • curry seasoning or curry paste (green or red, doesn’t matter)
  • salt

How to make it:

Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
