Radishes in Salads

One of the easiest and most common ways to eat radishes are simply cutting them up and adding them to a salad. The combinations are endless, so just use what you have at home. In this example I used butter lettuce because that was the only type of lettuce I had at home. Then I added tomatoes, radishes, and feta cheese. You can add any other vegetables to it as well of course, like cucumber, bell peppers, arugula, baby spinach, red onion, etc. And you can add any protein you want to that salad; either to have in the salad or on the side of the salad.

Drizzle some olive oil and vinegar on top as dressing, or make your own creamy dressing with sour cream or healthy mayo and spices. But make sure the mayo is made with either coconut/olive/avocado oil. The most common oils in store bought mayo are sunflower/soy bean/safflower/corn oil and they create inflammation in the body from their extremely high omega-6 content. In Sweden you can’t yet find a healthy mayo in the store so when I’m here I make my own.
