Roasted Beets with Feta

The sweet flavor from the red beets paired with the salty feta is a win-win combination for sure!

Roasted red beets are so delicious! Most of the times we mix different root vegetables, like red beets, parsnips, carrots, and rutabagas with onion and roast together with olive oil and sea salt in the oven for about 15-20 min on 200°C/400°F.

But sometimes we roast red beets by themselves, and then towards the end we add chunks of feta cheese to let them start melting in the oven. And it is SUPER delicious!! The sweet flavor from the red beets paired with the salty feta is a win-win combination for sure!

  1. Clean the beets thoroughly so no dirt is left on the peel. (If your beets are not organically produced then peel the beets as well. Otherwise you can leave the peel.)
  2. Cut up the beets in either wedges, like french fries, or circles.
  3. Place on a baking sheet or Pyrex glass form, drizzle some olive oil on top, and then roast in the oven for about 15 min on 200°​C/400°​F. Cut up the feta into chunks, or scramble feta on top of the beets. Then place in oven again for 5-10 min, until the feta gets warm and beets are cooked through.
