Scrambled Eggs with Broccoli

This is my favorite breakfast at the moment. Ummm…broccoli for breakfast?? YES, it’s amazing!! Here’s what you do…

What you need:
Broccoli (fresh)
Eggs
Coconut oil
Salt & pepper

Cut up the fresh broccoli and cook in a frying pan for about 5 min with a good amount of coconut oil. The broccoli will start absorbing the coconut oil quickly, so add a little extra. Remember, coconut oil is one of the best sources of fat you can use! It contains important fats that are easy for the body to use as energy, not storing as. So don’t be afraid to use a little extra coconut oil with this recipe. 😉

Now, push the broccoli to the side of the pan and pour the eggs into the pan. Once the eggs start scrambling you mix them together with the broccoli. Add some salt and pepper, and then you’re done. Enjoy! 🙂
