Red Cabbage & Brussels Sprout “Rice”

By eating “vegetable rice” instead of normal rice, you’re adding a lot more nutrients to your meal and cutting down on fast carbohydrates all at the same time.

Red Cabbage & Brussels Sprout "Rice"

Have you ever heard of cauliflower “rice”? Since cauliflower has such a neutral flavor and is white, it really is a GREAT rice replacement in so many ways. Well, this is kind of similar to that, but with red cabbage & Brussels sprouts instead! It’s not white and it doesn’t taste like rice, but it has a great flavor combination and you can eat it instead of rice in meals. By eating “vegetable rice” instead of normal rice, you’re adding a lot more nutrients to your meal and cutting down on fast carbohydrates all at the same time. Normal rice also has the problem of containing arsenic, so there are a lot of good reasons to cut down on rice consumption.

In Sweden, where I’m from and currently living, one of our main grocery store chains sell cut up red cabbage and Brussels sprouts as a mix, ready to fry or boil as “rice”. They also sell grated cauliflower and specialized zucchini, to make it easier for people to eat more vegetables. I got inspired by them and made it myself about a month ago, and it’s really good! Both the color and flavor combination of the red cabbage and Brussels sprouts make it a great part of a healthy meal.

What you need:

Red Cabbage
Brussels Sprouts

What you do:

Put chunks of red cabbage and Brussels sprouts into a food processor, and pulse until finely chopped. Use the knifes in the food processor, not the grating function. Either fry with some butter or coconut oil (my favorite way of making it), or boil for a few minutes until tender. Serve instead of normal rice, maybe together with a burger patty or fish along with steamed broccoli?

Coconut Curry

Coconut Curry

Coconut curry can be made in a multitude of ways.

What you need:

  • shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
  • OR frozen stir-fry vegetable mix (not AS good but faster)
  • protein (chicken, fish, shrimp, or lentils)
  • coconut milk
  • curry seasoning or curry paste (green or red, doesn’t matter)
  • salt

How to make it:

Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
