Mashed Rutabaga (Swedish Turnip)
Rutabagas are a great alternative to potatoes.
Mashed rutabaga is almost as common as mashed potatoes in Sweden. At least it used to be when I grew up.
Rutabagas are a great alternative to potatoes in many ways, as they contain much less carbohydrates than potatoes, and more nutrition as well.
Wash rutabagas and peel off the skin with a potato peeler. Cut rutabagas into medium sized squares and boil on the stove until soft enough to mash. Use a toothpick to test when rutabagas are done.
Mash the rutabagas with a bit of the water from boiling. Add some salt, pepper, butter or coconut oil, and maybe a dash of cream (optional).
Serve as you would serve mashed potatoes.

Coconut Curry
Coconut curry can be made in a multitude of ways.
What you need:
- shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
