Asparagus with Creamy Balsamic & Pine Nuts
This is my absolute favorite way of eating asparagus! It’s more expensive because of the pine nuts, but that also makes it a perfect dish for special occasions. You can of course skip the pine nuts or replace them with sunflower seeds for a cheaper version of the dish. Enjoy!
What you need:
- Asparagus
- Olive oil
- Sea salt
- Balsamic vinegar
- Pine nuts
What you do:
- Break off the hard/white ends of the asparagus.
- Fry the asparagus in olive oil or coconut oil on the stove, for 5-10 minutes.
- Put on a plate and drizzle creamy balsamic vinegar on top.
- Dry roast pine nuts on the stove until they get a slight golden color.
- Add the pine nuts on top of the asparagus.

Coconut Curry
Coconut curry can be made in a multitude of ways.
What you need:
- shredded cabbage, chopped onion, cubed zucchini, and shredded carrots
- OR frozen stir-fry vegetable mix (not AS good but faster)
- protein (chicken, fish, shrimp, or lentils)
- coconut milk
- curry seasoning or curry paste (green or red, doesn’t matter)
- salt
How to make it:
Fry the vegetables in coconut oil on the stove and add your choice of protein. Add a can of coconut milk and lots of curry seasoning. Add some salt to taste.
